Hey y’all!
So, as most of you know, I am not the chef in the house. The Good Lord blessed me with a man that loves to cook, thus making my life 90% easier. One thing Mr. R wanted most when we were purchasing our new home was a great kitchen that he could be cooking in while entertaining, and still getting to be part of the action. Luckily, we got just that, and Mr. R is so happy in his kitchen (and me too, on rare occasion).
He loves cooking up new recipes any chance he gets, and one that we are loving recently is something we tried for the Super Bowl: Chicken and Sausage Kabobs with Veggies! It’s so easy and quick, and perfect for parties, especially as the weather starts warming up!
Ingredients:
- Chicken breast, cubed up
- Pineapple chicken sausage from Costco
- One of each: green, yellow, red pepper, and onion
- Cumin, chipotle Tabasco, salt, pepper, and Paprica for seasoning
Directions:
- Cube chicken, sausage, and all veggies
- Toss in seasoning and let sit in refrigerator for 2 hours
- Pile them on the skewers
- Cook at 420 for 30 minutes or until chicken juices are clear
Now, I will say that when you are going to be cutting up this many things, a sharp knife is so important.
