Hey y’all!
Here’s a great recipe that we have made twice in the past few weeks! It’s healthy and easy and just plain delicious…. it’s Squash Boats! Yep, instead of using carbs, we’ve loaded up squash with a ground turkey mix (however, carbs are totally acceptable and we did pair it with spaghetti yesterday, which was delicious!)
Ingredients:
- 1 package of Turkey meat
- 1 yellow pepper
- 1 red pepper
- 4 squash
- 2 cups chopped spinach
- 1 onion, diced
- 2 cups broccoli, chopped finely
- 1 cup of cheese to top
Directions:
- Cut squash in half and scoop out the middle to form boats (keep insides and chop them up for the mix)
- Sautéed broccoli and onions
- Sautée the meat with garlic
- Sautée spinach
- Add all together with 1/2 cup tomato sauce
- Pour filling into boats and top with cheese
- Bake at 420 for 20 minutes
