Hey everyone!
With an (almost) 1-year-old running around the house, life has certainly flipped from “all about us” as a couple, to “all about family”. With that, we’ve had to keep in mind not only what we love to eat, but what our daughter loves to eat. Luckily, we’ve been blessed with a gal that loves her beans, rice, tacos and pollo, so she fits right in and we’ve been able to keep mealtime pretty much the same. But it’s definitely been fun learning her likes and dislikes, and taking them into consideration when prepping for mealtime.
One of the things we love most as a family is breakfast. While most people don’t make time for breakfast or prefer it on the run, we eat breakfast together 7 days a week- even if it’s just instant oatmeal. So when Mr. R and I were asked to partner with HERDEZ, the maker of some wonderful salsas and products, to celebrate Día del Niño, we knew our recipe du jour would be breakfast! (And let’s be honest- this was all Mr. R- we all know he’s the Master Chef around these parts!)
Now, HERDEZ has tons of great recipes on their Recipes Page, but we decided to make something tried and true in our family- something passed down from my parents – Migas. If you’ve never had Migas before, you’re missing out! It’s a simple recipe, but one that you can play around with and add whatever you’d like till you get it perfect for your family!
To start out, you’ll need the following ingredients (this recipe is enough for 4 people):
- 4 – 5 eggs
- 3 – 4 corn tortillas
- 1/2 c shredded cheese
- 2 small tomatoes
- 1/2 yellow onion
- HERDEZ salsa for garnish
The recipe for Migas is actually pretty easy. I’ll break it down into easy-to-follow steps.
Step 1:
In olive oil, lightly sauté the onions until clear. Then, add in the tortillas and sauté until lightly fried.
Step 2:
Beat the eggs until mixed well, in a small bowl. Add in the eggs to the pan, and scramble together with the crisp tortillas and onions.
Step 3:
Top the scramble with cheese and tomatoes. Mix well.
Step 4:
Plate and garnish with your favorite HERDEZ salsa. I chose the HERDEZ Salsa Verde, which Mr. R chose the HERDEZ Salsa Casera Mild. I will say, I tried both and they are equally delicious! There’s just something about the tang of the Salsa Verde that makes me want more.more.more! We also enjoyed our Migas with a side of refried beans.
Once it was plated, we sat down, chowed down, and shared with Anissa Marie, of course! After all, this celebration was in honor of Día del Niño, which is a holiday that celebrates the kid in everyone. Because of this holiday, which is celebrated on April 30 (coincidentally, Anissa’s due date!) HERDEZ brand is holding a #ThrowbackThursday photo contest on its Facebook wall!
