Today at work, we’re having a potluck lunch to celebrate the holidays. (YUM!) When I signed up to bring cookies, I went in search of a new recipe I hadn’t tried before that were just oozing with holiday goodness, and I ended up finding a recipe for Brown Sugar Cinnamon Cookies on Pinterest. So, while I can’t take credit for the recipe, I can share it in hopes that you’ll all enjoy these holiday treats as much as I do!
Brown Sugar Cinnamon Cookies (originally posted by Lemons for Lulu)
Ingredients:
- 1 cup butter softened (2 sticks)
- 1 1/2 cup brown sugar
- 1 egg
- 2 1/4 cup flour
- 2 tsp baking soda
- 1/2 tsp salt
- 3/4 tsp cinnamon
- 1 10 oz. bag Cinnamon Chips
Instructions:
- Pre-heat oven to 375
- In a bowl, mix melted butter and brown sugar and beat until creamy
- Add the egg and mix well
- In a separate bowl, mix the flour, baking soda, salt and cinnamon. Carefully add that mixture to the mutter mixture, scraping the bowl as necessary to fold it in. Continue to mid until well blended
- Stir in bag of cinnamon chips
- Drop dough by tablespoon onto cookie sheets (I needed one large and two small)
- Bake until edges are set, about 8 – 10 minutes
- Let cool for 1 minute on baking sheets before moving to a cooling rack
- Makes 34 large cookies
