Hey yall!
This is such a great, EASY recipe, I just had to share. We got the original idea from a class we took at The Cook’s Warehouse, and then we modified it, of course!
Couscous is seriously one of the easiest side dishes to make, so try this one out and enjoy a light, fresh side. We paired it with salmon and chicken breasts, and it was delish!
Ingredients:
– 1 box of couscous
– 1/2 cup of orange juice
– 1 14 oz. can of chicken broth
– 1/2 orange pepper, cut up in big chunks
– 1/2 green pepper, cut up in big chunks
– 1/4 onion, cut up in big chunks
– 1/2 tomato, cut up in big chunks
– Orange and lemon zest
– 1 tsp. of olive oil
– Dash of salt
Recipe:
– Bring the chicken broth, oil, salt and orange juice to a boil
– Add in the coucous and zests, stir, cover and turn off heat
– Let sit 5 mins
– Meanwhile, sauté all the veggies (except the tomatoes, those are best fresh!)
– Fluff with a fork
– Add in the sauteed veggies and fresh tomato, and mix
