Have to share this delicious and super easy recipe with you all (are you picking up on a theme here?) Mr. R originally found this recipe for fresh strawberry pie here in The Test Kitchen, and it was a hit when we debuted it at a family 4th of July party. Needless to say, this is going to be our go-to dish to bring anywhere!
Last weekend we went to a BBQ and brought two pies. Everyone loved them!
Ingredients:
-2.5 lbs. fresh, whole strawberries
– 3/4 c sugar
– 2 tbs. cornstarch
– 1.5 tsp. pectin
– pinch slat
– pie sheet
– whipped cream
Recipe:
First, bake your crust and let cool. We used frozen, pre-made crusts, but if you’re feeling adventurous, here is a recipe for a pie crust from Simply Recipes.
Puree 6 large strawberries until smooth
In a bowl, mix sugar, cornstarch, pectin and salt. Mix it in with the strawberry puree.
Bring mixture to a boil and let boil for 2 minutes, stirring the whole time. After it cooks, transfer the gel-like mix to a bowl, add 1 tsp. lemon juice. Cool filling.
Add whole strawberries to puree and mix
Pile filling into pie crust
Let cool in fridge 2 hours. Then add whipped cream and enjoy. This recipe makes one pie… but you may need two 😉
